Oven Roasted Sweet Potatoes

In honor of the Sisterhood Recipe and Joke Swap,

Oven Roasted Sweet Potatoes or Sweet/gold mixed potatoes

    2 (1 ounce) packages dry onion soup mix

    3-4 pounds sweet potatoes, peeled and cut in chunks. May substitute in 1 – 1 ½ pounds gold potatoes

    1/2 cup vegetable oil

Directions

    Preheat oven to 400 degrees F.

    In a large bowl, toss the dry onion soup mix, sweet potatoes and vegetable oil until the sweet potatoes are well coated.

    Arrange the mixture in a large roasting pan. Bake in the preheated oven about 60 minutes, or until the sweet potatoes are tender. OK to cover with foil the first 30 minutes.
