Move over, Gefilte Fish. Vegetarian Chopped Liver is here

At the Passover Seder each year, we start with a little plate on top of everyone's dinner plate. This is where you spill the drops of wine commemorating the plagues, and break your matzah to eat with chrein and charoseth, and where you can eat your hard cooked egg (delicious with salt water and horseradish sauce). Then the next course is the gefilte fish.

But, what about if you have vegetarians? What about people less steeped in tradition who don't  like gefilte fish? What to do for them? Last year, I gave them a bed of romaine lettuce with cooked beets and carrots, while everyone else got a piece of gefilte fish on a bed of romaine lettuce with cooked carrots. But it didn't feel equal. This year I upped my game with the following mushroom-based mock chopped liver. Then, everyone who came through had a nice plate with romaine and carrot, and they either added a piece of gefilte fish or a scoop of mock chopped liver.

PS if you're going vegan, add more walnuts and perhaps some cooked carrots. It changes the texture but will be also delicious.
